I love cooking. Unfortunately, I also love food and eating food....therefore, I have started running again. To the tune of training to do my second marathon (and in the process a couple of more 5/10K races and my fourth half marathon). And, the running means...
I can continue to eat (basically) whatever the heck I want. Minus all the soda. I have really been cutting down on soda and trying to drink more water. Drinking water makes running easier. Drinking soda does not. It actually dehydrates....which doesn't make sense, but I believe the nutritionist-powers-that-be so I will follow their rules.
So, this weeks menu at Casa di Upham--
Thursday- Fish Tacos (with Tilapia) with Apple Coleslaw and Sweet Tartar Sauce, Coconut Rice, and Mango Salsa (Fish Tacos are out of Cuisine at Home-- a favorite magazine of mine)
Friday- (Amazing) Lentil Bean Soup (brought the beans back from Italy so I know they are awesome), Salad, and Tastefully Simple Beer Bread
Saturday- Going out. Kyle's 7th Birthday and he gets to choose the locale...hopefully he chooses well. Any chance he will want to go out for sushi? My favorite dinner? : )
Sunday- Spaghetti with Meatballs, Garlic Bread, and Salad (Sundays are my busiest days so we have to generally go with things Mike can help in preparing- and he makes great spaghetti sauce).
Monday- Lemon Garlic Shrimp and Grits served with a Spinach Salad (trying something new that has rave reviews on Food Network website...)
Tuesday- Classic Beef Stew and Crusty Home Made Bread (stole this one from Paula Deen, and since we have over 400 pounds of beef in the freezer, we try to eat it at least twice a week!)
And, Randomness...
The month of February has been such a blur- I can't believe it is nearly over. Kyle is turning 7 on Saturday- which is something else I can hardly believe. I swear he just started preschool and he is now finishing first grade. Keeps losing teeth so fast the tooth fairy can barely keep up (and as proof, she forgot to come on Saturday night and had to make up for it on Sunday night!) He can't wait to have nearly 15 of his friends from school over on Saturday for his birthday party. We have a lady coming who brings animals with her for the kids to see and learn about. I think a room of young boys will like that- and if not that, the pizza, cake, and ice cream, definitely.
Ryan is running all over the house and getting into absolutely everything that is not nailed (or baby-latched) shut. He has more teeth than Kyle in the front now- with four on top and soon-to-be four on bottom. I almost got him his first hair cut yesterday, as there are long blonde whispy hairs that keep covering the tops of his ears, but I chickened out and decided he should keep looking like my baby a little while longer.
Erin did get her hair cut this week- a few inches trimmed off and suddenly she looks grown up. Maybe it is also the layered long side bangs-- makes her look sassy. She is starting to read through Kyle's books and is among the top of her class in kindergarten. I don't know what I will do when she is gone all day next year...cry or celebrate? ; )
Camp sign-ups are piling up on my desk and it is about time to figure out our summer plans. Wheaton Academy, Victory, and Willow Creek have lots of great opportunities. I know for sure that this year Mike and Kyle are going to Camp Paradise, a father/son camp in the most northern part of Michigan, for 6 days in July. Then there are basketball camps, fitness camps, swimming lessons/pool passes, and other sports camps to enroll for. I see March as a very expensive month- and Kyle has his orientation tonight for Karate lessons. He seems to really like the trial ones he has had and we are looking at keeping him in twice a week.
February was a busy work month for me. In addition to teaching a Bradley class, I wrapped up a Homebirth 101 class, trained 14 doulas who will hopefully certify with DONA, attended a couple of memorable births-- one of twins and another who after two days of on again and off again labor went so fast that the baby nearly came before the midwife and I got there! Next month promises more births, and more classes- there are always babies coming and I am hoping that my recent work in figuring out insurance billing makes doula services more accessible to those who normally couldn't afford it otherwise.
So, there is a little catch up- I am going to stop promising to blog more, but I will try. Until then....
